Instructions
Prepare the Chicken Wings
Begin by thawing your chicken wings if they are frozen. Once thawed, thoroughly pat them dry with paper towels. This step is crucial to remove any excess moisture and will help achieve a crispy finish. If you are starting with whole chicken wings, follow the instructions in this article for cutting the wings into 3 parts: wingettes, drumettes and tips.
2 lbs chicken wings
Prepare the Chicken Wing Breading
In a large mixing bowl, combine flour, baking powder, cornstarch, salt, and black pepper. Sift to remove any clumps.
1 cup flour, 4 tbsp cornstarch, 2 tsp baking powder, 2 tsp fine salt, ½ tsp black pepper
Coat the Chicken Wings
Toss your chicken wings in the breading mixture until they are evenly coated. Ensure each wing is fully covered with the mixture for the best flavor and texture. Gently shake off any excess flour mixture.
Preheat the Air Fryer
Preheat your air fryer to 400°F (200°C). Preheating is essential as it helps to start the cooking process quickly, ensuring a crispy exterior.
Arrange the Wings in the Air Fryer
Place the breaded wings in the air fryer basket. Spread them out in a single layer, making sure they are not overlapping. This allows for optimal air circulation and even cooking.Spray the wings lightly with air fryer oil spray or the oil of your choice. Spray the wings lightly on all sides. This is critical for making crispy wings!

Air Fry the Wings
Cook the wings in the air fryer at 400°F (200°C) for 20-25 minutes. Use the 'air fry' function if you have one on your machine.About halfway through the cooking time, open the air fryer and flip the wings—or shake the basket to move the wings around. This ensures that each side gets evenly crispy and golden. Rely on your air fryer's recommendations for how many times to shake the wings, and for the temperature, setting and timing.
Check for Doneness... and Crispiness!
After the cooking time, check if the wings are crispy and golden brown. If necessary, cook for an additional few minutes for extra crispiness.Use a meat thermometer to check for doneness, however in general the inside of chicken wings are done long before they are crispy.
Rest and Enjoy!
Once cooked to your satisfaction, remove the wings from the air fryer and let them rest for a few minutes. This allows the outside to stay crispy while the inside remains juicy.Toss them in the sauce of your choice (optional).
